杂菜辣烤鱿鱼的做法：
1、鱿鱼洗净，撕去外层皮，切成鱿鱼圈（以上步骤都可以要求卖鱿鱼的代劳，不过建议切圈还是自己来，否则就会同上图一般没有美感）；
2、腌制鱿鱼：生抽3勺、老抽半勺、白糖3小勺、辣椒粉1小勺，将鱿鱼丝浸泡在酱料中约2小时。
3、准备蔬菜：洋葱切丝、美国刀豆切块、娃娃菜掰开，散放在烤盘内。在蔬菜表面刷上油，均匀三上盐粒。
4、烤蔬菜：烤箱180度，娃娃菜容易焦，最好压在油层下。
5、烤鱿鱼：蔬菜烤10分钟左右，取出烤盘，将鱿鱼圈均匀地散放在蔬菜上，再刷上一层油，蔬菜上可以略微涂一层薄薄的酱汁。娃娃菜、洋葱烤后会划水，酱汁不要涂太多。烤箱180度，继续烤12分钟左右。
第二次做烤鱿鱼，比一次成功很多。首先，尽量用色拉油，第一次用的是黄油，结果腻死；其次，可以多配些蔬菜，茄子、土豆应该都是不错的选择；第三，鱿鱼缩水严重，一定要备足分量，就算只买一条，也要用蔬菜滥竽充数，否则做下来烤盘显得太空旷了。
